Quick N’Easy Sheet Pan Dinner | August 10, 2017

Now that you’ve got mornings covered with our Back-To-School Breakfasts, it’s time to tackle dinner. Whether you are shuffling kids around to soccer practice or working on the latest school project, sometimes there just isn’t enough time in the evening to get a full, well-balanced dinner on the table. Instead of swinging by the nearest fast-food drive-thru or whipping up a tasty batch of Kraft Mac & Cheese, spice up your evening with these Sheet Pan Chicken Fajitas.

What you’ll need:

Slice up your classic fajita veggies.

Give your chicken slices a quick toss in some taco seasoning.

Throw them all on the sheet pan and bake!

For an added flair, we kicked-up our sour cream a notch with a little lime zest and juice…this WILL change your life!

Put it all together on your favorite tortilla and enjoy!

SHEET PAN CHICKEN FAJITAS

YIELDS 8 tacos  |  PREP TIME  40 minutes  |  PRINT PDF

Chicken Fajitas

INGREDIENTS
  • 3 peppers (green, orange, red)
  • 1 onion
  • 2 large boneless, skinless chicken breasts (about 1 lb.), sliced
  • 2 Tbsp. olive oil
  • 2 Tbsp. Fajita seasoning / Taco seasoning
  • Salt, pepper, red pepper flakes, garlic powder to taste
  • 8 small flour or corn tortillas
  • Optional toppings: Fresh limes, chopped cilantro, avocado slices or guacamole, shredded cheese, sour cream*

DIRECTIONS
  1. Preheat oven to 400°F and set an oven rack in the top third of your oven. Set aside a large baking sheet.
  2. Place chicken breasts onto a cutting board, and cut into 2- to 3-inch strips using a sharp knife. Marinate the chicken with olive oil and Fajita seasoning. Set aside.
  3. Cut onions and peppers into 3- to 4-inch pieces.
  4. Place peppers, onions, and chicken onto the baking sheet. Sprinkle with Fajita seasoning, garlic powder, red pepper flakes, salt, and pepper.
  5. Drizzle oil across the pan, and use Tip Top tongs to toss the ingredients until coated evenly. Bake for 15 minutes.
  6. Remove from oven and use tongs to turn the ingredients one-quarter of the way over.
  7. Wrap the tortillas in foil and place in the pan the last 5 minutes to warm them up.
  8. Mop up excess juices with a paper towel and then add the tortillas to the pan. Return to the oven and bake for 5 more minutes.
  9. Assemble your Chicken Fajita Tacos, top with your favorite toppings, and serve!

 

Lime Sour Cream

INGREDIENTS
  • 1 cup sour cream
  • Juice of ½ lime
  • Zest of 1 Lime
DIRECTIONS

Mix together sour cream, lime juice, and lime zest, then enjoy!
