Summery Fruit Salad | June 08, 2017
Fruit salad is awesome. It is colorful, fresh, and I don’t know of anyone who isn’t excited about having a good fruit salad on the table any time of year. In the summer though, when berries are in season and everyone is ready for the bright flavors of summertime, there is nothing better. Oh, wait… yes, there is – Fruit Salsa!
The salsa we all think of is made with tomatoes, onions, cilantro, and lime and it pretty much goes with everything. In fact, I think it is still America’s best selling condiment. However, salsa means sauce coarsely chopped, so let’s be open-minded to all the possibilities!

It is best if you use seasonal ingredients to create a bright, fresh, colorful condiment. Whether traditional or fruit salsa, it is important to have balanced flavors. You need a fruit (tomatoes), acid (lime), onions, and a fresh herb (cilantro). For a fruit salsa, all the elements are the same. I am using:
- Fruit: Strawberries, kiwis
- Acid: Ruby grapefruit and a little lime
- Spring onions
- Herb: Tarragon (but basil would be AMAZING, too)

This combination gives you a sweet, tart, herbaceous and colorful sauce to spoon over roasted fish (especially a more oily fish like salmon) or chicken right off the grill. It adds a cool element to a hot dish. The acid from the grapefruit cuts some of the sweetness of the strawberries and kiwi without overpowering them. I like to leave the fruit somewhat chunky so that each component can be seen.

I also got to pull out two of the best Tovolo kitchen helpers, the Tovolo Strawberry Huller and the Tovolo Kiwi Tool. The huller is the best and fastest way to hull strawberries without staining your fingernails or taking half of the fruit along with the hull. Just push the stainless steel tube up through the bottom and voila, you have a perfectly–hulled strawberry! I then chopped the strawberries into quarters (or a little smaller for the really big guys).
The Tovolo Kiwi Tool is a must in everyone’s kitchen. I love kiwi fruit but peeling it is a pain. With the Tovolo Kiwi Tool, you simply cut the kiwi in half, insert the wires into one-half, and twist. It peels while quartering the fruit. Seriously, it is that simple. I eat way more kiwi (super high in Vitamin C) since that cool little tool came into my life.

Armed with knowing the four elements of a great salsa, you can use this guideline to create you own spin using the fruits that are in season near you anytime of year.
FRUIT SALSA
YIELDS 2 cups | PREP TIME 15 minutes | PRINT PDF
INGREDIENTS
- 1 pint of strawberries, hulled and coarsely chopped
- 4 kiwi fruit, peeled and quartered
- 1 Ruby Grapefruit, halved
- use half for freshly squeezed juice
- use half to chop into small pieces
- ½ lime, freshly juiced
- 1 Spring onion or a quarter of a sweet onion, chopped
- 2 sprigs of tarragon, minced (or 4 or 5 leaves of basil minced)
- Salt & Pepper to taste
DIRECTIONS
Add all of the ingredients into a small bowl. Add salt and pepper. Stir well. Let sit for at least 30 minutes for the flavors to meld together. Serve over fresh fish, grilled chicken, or pretty much anything.
